1/2 | cup | butter (1 stick) | |
|
|||
1/2 | cup | heavy cream | |
|

1/8 | teaspoon | salt | |

2 | cups | powdered sugar | |
|

1 | teaspoon | vanilla extract | |

1/4 | cup | red candied cherries, finely chopped | |
|
|||
1/4 | cup | green candied cherries, finely chopped | |
|
|||
1 | teaspoon | powdered sugar | |
|
Grease an 8 inch square baking dish with butter. Line with parchment paper so the ends extend over the edges of the dish. Grease parchment paper with butter.
In a large saucepan, bring sugar, butter, heavy cream and salt to a boil, stirring frequently.
Allow to boil 5 minutes, stirring constantly. Remove from heat and add powdered sugar 1/4 cup at a time, stirring into mixture before adding more. Add vanilla and stir to fully combine.
Toss chopped cherries with 1 teaspoon powdered sugar and stir into mixture until evenly distributed.
Spoon mixture into prepared baking dish and refrigerate 1 hour.
Cut into 36 squares and serve. Keep refrigerated.
